Apple Crumble Granola and Breakfast Parfait

Ingredient List

Granola:

  • 1 Cup Oats
  • 1/4 Cup Puffed Buckwheat
  • 1/4 Cup Puffed Rice
  • 1/4 Cup Ground Almonds
  • 1/4 Cup Chopped Nuts
  • 2 1/2 Tbsp Rice Malt Syrup
  • 1/4 Cup Water
  • 1 Apple
  • 1/2 Tsp Cinnamon
  • 1/2 Tbsp Flaxseed Meal

Parfait:

  • 1 Frozen Banana
  • 1/4 Cup Almond Milk
  • 1 Medjool Date
  • 1/2 Tsp Maca Powder
  • 1/4 Tsp Cinnamon
  • 2 Tbsp Chia Seeds
  • 1/4 Cup Almond Milk

Method

  1. Pre-heat the oven at 220°C.
  2. In a bowl, mix and combine the Oats, Puffed Buckwheat, Puffed Rice, Ground Almonds, Chopped Nuts, Cinnamon and Flaxseed Meal. Set aside.
  3. Cut the Apple in half. Slice one half horizontally, each slice being a width of approximately 1cm. Slice and dice the remaining half. 
  4. Mix and combine the slices and dices of apple in the granola mix, then set aside.
  5. In a small bowl, pour the Rice Malt Syrup and warm Water, then mix well to dilute the rice malt syrup. (Alternatively, you can use Maple or Date Syrup).
  6. Pour the diluted rice malt syrup into the granola mix, assuring that it is well-coated.
  7. Place the granola mix on a lined baking tray, spreading it evenly.
  8. Place the baking tray into the oven at 180°C for 10 minutes.
  9. Once the time has elapsed, remove the baking tray from the oven. Mix the granola to refrain from any burning, then spread it evenly on the baking tray. Place the baking tray in the oven for another 10 minutes at 180°C.
  10. In the meantime, prepare the remaining increments of the Breakfast Parfait:
  11. Chia Pudding: in a small bowl, place the Chia Seeds and Almond Milk, then mix well and combine. Set aside.
  12. Banana Nice Cream: place the Frozen Banana, Almond Milk, Medjool Date, Maca Powder and Cinnamon in a blender, then blend until well combined. Place in the freezer to retain coolness.
  13. Once the cooking time for the granola has elapsed, remove the baking tray from the oven and allow it to cool for 5-10 minutes before assembling the parfait.
  14. After the granola has cooled, proceed with assembling the parfait in whatever manner you wish, with any additional desired toppings.
