Quick, Easy & Healthy Vegan Buckwheat Pancakes

One of the first breakfasts I learned how to make as a vegan was a stack of pancakes and since then, it has remained my absolute favourite breakfast.

With less than 10 ingredients and less than 10 steps, this recipe is surely the ultimate go-to breakfast.

Makes 1 Serving





  • 1/4 Cup Oats

  • 1/2 Cup Buckwheat

  • 1/2 Ripe Banana

  • 1/4 - 1/2 Cup Almond Mylk (Or any Plant-based Mylk



  • 1 Medjool Date

  • 1/2 Tbsp Carob Powder

  • 2 Tbsp Warm Water




  1. Blend Oats and Buckwheat in a blender or food processor.

  2. Add Banana and Mylk to the blender and blend.

  3. Allow pancake mix to sit for 2-3 minutes.

  4. Meanwhile, heat up a non-stick pan.

  5. Once the pan has heated up, pour out a portion of the pancake mix onto the pan.

  6. Wait until bubbles begin to form and the upward side of the pancake resembles a matte texture, then flip.

  7. Repeat until pancake mixture is finished.


Carob sauce

  1. Add the Medjool Date and Carob Sauce to a blender with Warm Water and blend.


Once this is all done, add whatever toppings you wish and you're ready to go!
