Vegan Chocolate Mousse Cups | Loving Earth

After spending almost a month spent eating mostly raw foods, especially fruits, I had been craving something sweet and chocolatey. I've happily collaborated with Loving Earth to develop this recipe, which is satisfying for your sweet tooth, plus super easy to make!

Method

  1. Prepare a pot of boiling water.
  2. Wash, peel, then dice the Sweet Potato. Place it in the boiling water, allowing it to cook for approximately 15 minutes on low-medium heat.
  3. In the meantime, prepare the cup ingredients. Place all cup ingredients in a blender, then blend until well-combined.
  4. Divide the Cup mix into two balls. Flatten into a circular shape using a rolling pin.
  5. In a muffin tray, press down on the flattened mix, starting from the centre and working your way around the edges to develop a cup structure. Allow the cups to sit on a tray and refrigerate while preparing mousse.
  6. After the Sweet Potato cooking time has elapsed, allow the sweet potatoes to cool, then strain. 
  7. Place the Aquafaba in a blender, then blend at high speed for approximately 30-40 seconds.
  8. Add the remaining Mousse ingredients to blender, then blend at high speed until well-combined.
  9. Pour the mousse into the cups. Add any desired toppings, then allow freezing time for 2 hours.
