Matcha Chia Pudding Parfait | Easy + Vegan
After spending the past few weeks in the first stages of injury recovery, I've decided to implement further health changes to get my body feeling more energised and consume gut-healing foods.
I decided to make a nourishing and easy Matcha Chia Pudding and Green Smoothie Parfait to get started. Perfect for a breakfast or a snack, and to pre-make to take on-the-go.

PS: I used My Matcha Fix Matcha for this recipe!
- 3 Tbsp Chia Seeds
- 2/3 Cup Almond Milk
- 1 tsp My Matcha Fix Matcha
- 1 Frozen Banana
- 2 Pitted Medjool Dates
- 1/2 Cucumber
- 3 Tbsp Almond Milk
- Add Chia Seeds to a clean bowl. Mix with Almond Milk and My Matcha Fix Matcha, then set aside/refrigerate for 15 minutes.
- Add Banana, Dates, Cucumber and Almond Milk to a blender then blend and set aside.
- Assemble the chia pudding and green pudding, then top off with any desired toppings.
