Matcha Nice-Cream Sandwiches | Using "My Matcha Fix" Matcha

I recently collaborated with My Matcha Fix, a wonderful provider of certified organic matcha, and I must say, I've been so happy to be using My Matcha Fix Matcha over the past couple of weeks -  it's definitely one of the best matcha powders I've ever had!

  • 1 1/2 Cup Puffed Buckwheat
  • 1 Cup Puffed Rice
  • 1/4 Cup Soaked Dates in 3 Tbsp Warm Water
  • 1 Tsp Matcha Powder


  • 1 Frozen Banana
  • 2 Tbsp Almond Milk
  • 1 tsp Matcha Powder

Carob Sauce

  • 1/2 Tbsp Carob Powder
  • 1/2 Tbsp Soaked Medjool Dates in 1 Tbsp Warm Water
  • 1/4 Medium Banana

Matcha “Glaze” Sauce

  • 1 Tsp Matcha Powder
  • 1/2 Tbsp Soaked Medjool Dates in 1 Tbsp Warm Water
  • 1/4 Medium Banana


  1. Soak the dates in warm water for about 10. Once the time has elapsed, blend or smash the dates.
  2. Blend up all filling ingredients. Place in a lined baking tray, then place in the freezer.
  3. In the meantime, prepare your base. Place all base ingredients in a blender and blend it all up. Feel free to add more water if need be, however not too much.
  4. Once combined, flatten the mix, then divide into approximately 4 even squares.
  5. Place each square on a lined baking tray, then place in the freezer.
  6. Allow both the base and the nice-cream filling to sit in the freezer for about 30-40 minutes before constructing the sandwiches.
  7. Once the time has elapsed, begin to construct your sandwiches by scooping, then carefully placing and pressing down about 1 1/2 Tbsp of nice-cream on two square slices. Place the remaining two on top of the nice-cream, then gently press down.
  8. Place in the freezer for one hour.
  9. In the meantime, prepare your sauces. Blend up soaked dates, carob powder and banana, then set aside. Repeat this step with the matcha powder.
  10. After about 30 minutes, drizzle a bit of the two sauces over the sandwiches, then place in the freezer for the remaining 30 minutes.
  11. After the time has elapsed, add any desired dressings, then the sandwiches are ready to serve.
