Vegan Apple Scones | Naturally-Sweeted + Oil Free

I absolutely love Apple Cinnamon and am always eager to cook a meal that is comprised of the mix, so I decided to cook up some Apple Scones to satisfy my tastebuds.

Here is a simple and vegan recipe that I hope you enjoy as much as I do!

Ingredient List:

Scones

  • 1/4 Cup Buckwheat Flour
  • 1/4 Cup Oatmeal Flour 
  • 1 Flax Egg (1/2 Tbsp Flaxseed Meal + 1 Tbsp Water combined)
  • 1/4 Tsp Cinnamon
  • 1 Tsp Baking Powder
  • 1 Tsp Apple Cider Vinegar
  • 1/4 Cup Almond Mylk
  • 1/2 Banana
  • 1/2 Apple

Toppings

Carob + Date Sauce:

  • 1/2 Tbsp Carob Powder
  • 1 Medjool Date (Soaked)

Method:

  1. Pre-heat oven at 180°C.

  2. In a clean bowl, mix Buckwheat Flour and Oat Flour.

  3. Add Flax Egg and 1/4 cup of water to a small bowl, and combine well. (Feel free to add more water if required). Set aside for 5 minutes or until it forms a gel-like texture.

  4. Add the CinnamonBaking Powder, and sliced Apple pieces to the flour mixture, then mix and combine.

  5. In a separate bowl, mix and combine the wet ingredients: mashed Banana, Flax EggAlmond Mylk and Apple Cider Vinegar.

  6. Mix and combine both the wet and dry ingredients.

  7. Place the mix on a lined baking tray, then place in the oven for 20-30 minutes at 200°C - 220°C.

  8. Once the cooking time has elapsed, allow the scones to cool on the bench top for a few minutes, divide into triangular slices, then add any desired toppings.
