Vegan Apple Scones | Naturally-Sweeted + Oil Free
I absolutely love Apple Cinnamon and am always eager to cook a meal that is comprised of the mix, so I decided to cook up some Apple Scones to satisfy my tastebuds.
Here is a simple and vegan recipe that I hope you enjoy as much as I do!
- 1/4 Cup Buckwheat Flour
- 1/4 Cup Oatmeal Flour
- 1 Flax Egg (1/2 Tbsp Flaxseed Meal + 1 Tbsp Water combined)
- 1/4 Tsp Cinnamon
- 1 Tsp Baking Powder
- 1 Tsp Apple Cider Vinegar
- 1/4 Cup Almond Mylk
- 1/2 Banana
- 1/2 Apple
Carob + Date Sauce:
- 1/2 Tbsp Carob Powder
- 1 Medjool Date (Soaked)
Pre-heat oven at 180°C.
In a clean bowl, mix Buckwheat Flour and Oat Flour.
Add Flax Egg and 1/4 cup of water to a small bowl, and combine well. (Feel free to add more water if required). Set aside for 5 minutes or until it forms a gel-like texture.
Add the Cinnamon, Baking Powder, and sliced Apple pieces to the flour mixture, then mix and combine.
In a separate bowl, mix and combine the wet ingredients: mashed Banana, Flax Egg, Almond Mylk and Apple Cider Vinegar.
Mix and combine both the wet and dry ingredients.
Place the mix on a lined baking tray, then place in the oven for 20-30 minutes at 200°C - 220°C.
Once the cooking time has elapsed, allow the scones to cool on the bench top for a few minutes, divide into triangular slices, then add any desired toppings.
